Ingredients
  • 12 mini cones
  • 1 box lemon cheese cake filling
  • 1 carton fresh black raspberries
  • 1 pastry bag with a star tip

For the Filling:
  1. 3 8·ounce packages cream cheese, softened
  2. 3 eggs
  3. 1 1/3 cups sugar
  4. 3 tablespoons lemon juice
  5. 2 teaspoons vanilla extract
  6. 1 teaspoon grated lemon rind
Cheesecake:
  1. Beat cream cheese with electric mixer at high speed until completely smooth.
  2. Add eggs, one at a time, beating until smooth after each addition.
  3. Continue to beat, gradually adding 1 1/3 cups sugar, then lemon juice and 2 teaspoons of vanilla.
  4. Stir in lemon rind.
  5. Use a pastry bag with a star tip to pipe the frosting decoratively. No pastry bag? No problem! Just fill a resealable plastic bag with the frosting, snip off a corner and pipe away!
  6. Add blackberries or other fruit

Shortcut: Use 1 box of Jell-O Instant Cheesecake Pudding & Pie Filling (mix up according to instruction on box).
