Ingredients
Red Velvet Cookies
  • 1 cup Butter
  • 1 1/2 cups powdered sugar
  • 1 egg
  • 1-2 tablespoon red velvet emulsion
  • 1 teaspoon vanilla extract
  • 1 tablespoon dark chocolate cocoa powder
  • 1/4 cup melted chocolate chips, Ghirardelli 60% cacao
  • 3 cups flour
  • 1 tablespoon dry buttermilk
  • 2 teaspoons baking powder
  • 1 teaspoon salt
Royal Icing
  • 2 lbs confectioners sugar
  • 1/3 cup ?meringue powder
  • 3/4 cup water
  • 2 teaspoons vanilla extract

Royal Icing
  1. Place Sugar and Meringue Powder in mixer with whisk attachment and mix it so it’s blended.
  2. Add ¾ cup water and vanilla extract and mix on medium low until it’s combined about 3-5 minutes.
  3. Them turn mixer on high and mix until it’s stiff and fluffy.
Recipe Notes
Cookie Notes:
  • Red Velvet Baking Emulsion can be found at baking supply stores, if one isn't near you. There are plenty online. The brand I use is Loranns.
  • Dry buttermilk is made by Saco and found in the baking aisle near the evaporated milk section.
Royal Icing Notes:
  • A #2 icing tip was used to pipe the icing on. Allow icing to dry before staking or wrapping cookies about 8-10 hours.
