Watermelon Rice Krispies Treats
  • 8cups crispy rice cereal
  • 8cups marshmallows
  • 6tablespoons Butter
  • Green Food Coloring
  • red food coloring
  • mini chocolate chips, or raisins (for the “seeds”)
  1. Start by preparing two 8-inch cake pans by greasing with butter or non-stick spray.
  2. For the green “rind,” add 4 cups of cereal into large bowl and set aside. Melt 4 cups marshmallows and 3 tablespoons butter in a microwave-safe bowl for two minutes, or on the stovetop until puffy. Remove from microwave or stove and stir in a drop at a time of green food coloring until desired color. Pour green marshmallow mixture over the bowl of cereal. Quickly stir together using a buttered spatula.
  3. While still warm, divide green mixture between the two prepared cake pans, pressing along the sides of the pans to create a ring about 1.5-inches tall and 1-inch thick.
  4. For the red “watermelon,” repeat step 2 above, using red food coloring instead of green. Press the red mixture into the center of the two cake pans (inside of the green “rinds”) with a buttered spatula.
  5. Add “seeds” to top. Allow time to cool and then cut into slices.
