Ingredients
Lemon-Lime Pudding
  • 6 Egg Yolks
  • 1/4 cup lime juice
  • 1/4 cup lemon juice (we used Meyer lemons)
  • 12 ounces Sweetened Condensed Milk
  • 1 tablespoon Lime Zest
  • 1-2 tablespoon Non-Fat Greek Yogurt (or more to taste)

  • Lemon-Lime Pudding
  • 1 tablespoon Butter
  • 6 large Shot Glasses
  • 6 Lime Wheels for Garnish
  • 6 Homemade Graham Crackers, crushed

Instructions
  1. In a medium sauce pan, combine egg yolks, sweetened condensed milk, lemon and lime juice. Whisk continuously on medium heat until almost boiling. Lower the heat and continue to whisk until the mixture starts to thicken. Remove from heat and stir in lime zest and Greek yogurt. Chill pudding for 1-2 hours.
  2. *Tip: It is extremely important that you continuously whisk while on heat. Otherwise, your mixture will look more like an egg scramble than lemon-lime pudding.
  3. **Tip: Watch the heat of the pudding. Too high: your pudding will burn; too low: your arm will hate you.
  4. Once cool, crush graham crackers (we crushed ours in a food processor) and mix with butter. Generously layer the bottom of each shot glass. Follow with a generous dollop of lemon-lime pudding. Repeat these steps until each shot glass is full. Garnish with lime wheels and enjoy!
