Ingredients
  • 1 Medium Cantaloupe
  • 25 inches narrow pieces of Prosciutto Ham about 4 long
  • Shredded Coconut for Garnish
  • Ribbons of fresh cut Mint for Garnish

Instructions
  1. Prepare the Cantaloupe, either balls or squares, about 1 inch pieces. Use a Melon Baller or slice into twenty-five 1' squares.
  2. Prepare the Prosciutto, 1 inch wide, about 3-4 inches long.
  3. Line the serving plate with a bed of shredded coconut.
  4. Wrap each melon piece with a piece of the Prosciutto
  5. Arrange attractively on the serving plate. Press each piece into the bed of coconut. Sprinkle small amounts of additional coconut on top/
  6. Garnish with small ribbons of Mint cut chiffonade style.
  7. Serve chilled and ENJOY!
